Apple Slaw

Eating an apple a day is believed to keep the doctor away, and trying some Apple Slaw might ensure you're craving an apple every day. This anti-inflammatory slaw is packed with nourishing cabbage, crunchy carrots, sweet bell peppers, onions, and crispy red and tart green apples. The creamy, sweet dressing makes it even more delicious and satisfying. Give it a try and feel great!

Ingredients
  

  • 3 cups slaw mix or chopped cabbage
  • 1 carrot grated (if not using slaw mix)
  • 1 red apple unpeeled, cored and chopped
  • 1 Granny Smith apple unpeeled, cored and chopped
  • ½ cup red or yellow bell pepper finely chopped
  • 2 green onions finely chopped (or finely chopped red onion)
  • cup Greek or coconut yogurt
  • cup coconut palm sugar or Stevia to taste
  • 1 Tbsp lemon juice

Instructions
 

  • Combine the cabbage, carrot, apples, bell pepper and onion in a large bowl.
  • Mix the yogurt, sugar or Stevia, and lemon juice in a small bowl.
  • Pour the dressing over the slaw and serve. Or refrigerate to allow the flavors to blend and serve.

Notes

This slaw is delicious as a side dish or salad but also served with fish or pork tacos.
