Creamy Charred Onion Dip
Try this fresh twist on onion dip for your next party! No one will know that this is a healthy version of the party favorite.
- 1 bunch green onions trimmed
- 2 tsp olive oil
- 1 pinch each salt and pepper
- ½ cup plain Greek or coconut yogurt
- ½ ripe avocado
- ½ cup each mint and flat-leaf parsley
- ¼ cup fresh lemon juice
- 2 Tbsp water
- ¼ tsp salt
Preheat grill to medium-high.
Toss green onions with olive oil and a pinch of salt and pepper. Grill, turning often, until tender and lightly charred, about 2 minutes.
Cut grilled onions into pieces and transfer to a blender with remaining ingredients. Blend until smooth.
Serve with vegetables or Nut-Thins crackers for dipping.
