Creamy Green Onion Dip

Creamy Charred Onion Dip

Try this fresh twist on onion dip for your next party! No one will know that this is a healthy version of the party favorite.

Servings 1 cup

Ingredients
  

  • 1 bunch green onions trimmed
  • 2 tsp olive oil
  • 1 pinch each salt and pepper
  • ½ cup plain Greek or coconut yogurt
  • ½ ripe avocado
  • ½ cup each mint and flat-leaf parsley
  • ¼ cup fresh lemon juice
  • 2 Tbsp water
  • ¼ tsp salt

Instructions
 

  • Preheat grill to medium-high.
  • Toss green onions with olive oil and a pinch of salt and pepper. Grill, turning often, until tender and lightly charred, about 2 minutes.
  • Cut grilled onions into pieces and transfer to a blender with remaining ingredients. Blend until smooth.
  • Serve with vegetables or Nut-Thins crackers for dipping.
