Bacon Jalapeno “Mac” ‘n Cheese

Ingredients
  

  • 1 large head cauliflower cut into bite-size florets
  • 2 Tbsp finely chopped jalapeno
  • 1 Tbsp olive oil
  • 1 tsp ground mustard
  • ½ tsp onion powder
  • ½ tsp each salt and pepper or to taste
  • 6 slices bacon
  • 4 Tbsp ghee or butter
  • ½ cup chicken broth
  • ½ cup coconut heavy cream or full-fat coconut milk
  • 1 cup shredded sharp cheddar cheese

Instructions
 

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Spread the cauliflower and jalapenos on a baking sheet. Drizzle with olive oil and sprinkle with mustard, onion powder, salt and pepper. Toss to coat.
  • Cut the bacon into ½” pieces and distribute evenly over the cauliflower. Bake for 30 minutes.
  • Stir the cauliflower and bake for an additional 30 minutes.
  • Melt ghee in a large skillet. Add the broth and cream, whisking to combine. Bring to a low bubble, then remove from heat.
  • Whisk in the cheese, stirring continuously until melted.
  • Take the cauliflower and bacon out of the oven and add to the cheese sauce. Stir until cauliflower is fully coated. Serve immediately.

Notes

  • Don’t like a lot of spice? Cut down the amount of jalapeno or take it out of the recipe completely. Want just a little bit of spice? Add red pepper flakes instead.
  • Don’t like bacon? Well, that’s not even a question – bacon is everyone’s favorite food group! ????
