Stuffed Bell Peppers

  • Oven or Air Fryer


  • 2 medium to large bell peppers
  • ½ onion chopped
  • ½ cup cauliflower rice
  • 1 garlic clove minced
  • 1 tsp olive oil
  • ¾ lb ground beef
  • 7 oz canned diced tomatoes about ½ can
  • ½ tsp Worcestershire sauce no added sugar
  • Salt and pepper to taste
  • ¼ cup shredded cheese for Keto recipe only


  • Slice off the tops of the bell peppers, removing the stem, inner membranes and seeds.
  • On the stovetop, cook the whole bell peppers in boiling water, enough to cover the bell peppers, for about 3-5 minutes.  Remove peppers and rest upside down to drain.
  • Lightly saute onion and garlic in olive oil.
  • Add ground beef and cook until browned. Drain the ground beef and combine with cauliflower rice, tomatoes, Worcestershire sauce, salt and pepper.  Fill bell peppers with ground beef mixture.
  • Place stuffed peppers in the air fryer basket with ground beef facing up. Air fry for 15 minutes at 390°F.  To roast, preheat oven to 350°F and roast for 15-20 minutes.


If you are eating a Keto diet, add 1/4 cup shredded cheese to the recipe. Stir in 1/2 of the cheese in instruction 4 above.  Once the peppers are filled, top with remaining cheese.
