Heat grill to medium high or heat air fryer to 340°F.
In a bowl, mix sugar, chili powder, cumin, 2 tsp olive oil, salt and pepper until well combined.
Add cut pork to the bowl and toss to combine.
In a separate bowl, toss onion, bell pepper and pineapple chunks with 1-2 Tbsp olive oil.
Thread pork, onion, bell pepper and pineapple onto skewers and grill, turning occasionally, until pork is cooked through, about 8-10 minutes.
Using an air fryer, insert rack with kabob skewers into the air fryer basket and hang skewers onto rack. Air fry for 12-15 minutes or until pork is cooked through.
Notes
Add additional veggies or change them up for variety every time you prepare this meal.
These kabobs are delicious with steak, shrimp or chicken too.
