Kabobs Fasting

Pork and Pineapple Kabobs

This 20-minute meal can be made for under $10.00 to feed a family of 4.

Ingredients
  

  • 1 Tbsp coconut palm sugar
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 2-3 Tbsp olive oil divided
  • Salt and pepper to taste
  • 1 ½ lbs pork loin cut into 1" pieces
  • 1 red onion cut into 8 wedges and then halved
  • 1 red bell pepper seeded and chopped
  • ½ pineapple cored and cut into 1" pieces

Instructions
 

  • Heat grill to medium high or heat air fryer to 340°F.
  • In a bowl, mix sugar, chili powder, cumin, 2 tsp olive oil, salt and pepper until well combined.
  • Add cut pork to the bowl and toss to combine.
  • In a separate bowl, toss onion, bell pepper and pineapple chunks with 1-2 Tbsp olive oil.
  • Thread pork, onion, bell pepper and pineapple onto skewers and grill, turning occasionally, until pork is cooked through, about 8-10 minutes.
  • Using an air fryer, insert rack with kabob skewers into the air fryer basket and hang skewers onto rack.  Air fry for 12-15 minutes or until pork is cooked through.

Notes

  • Add additional veggies or change them up for variety every time you prepare this meal.
  • These kabobs are delicious with steak, shrimp or chicken too.
