Simple Banana Pancakes

Packed with bananas, this light and fluffy anti-inflammatory recipe is really easy to make. Try this gluten free, 3 ingredient recipe for breakfast or for a snack, any time of day!

Ingredients
  

  • 1 Tbsp coconut oil
  • 1 banana
  • 2 eggs

Instructions
 

  • Smash the banana and puree in a blender or food processor.
  • Add eggs to the mixture and combine.
  • Put a small amount of oil in a skillet and heat until warm. Spoon in batter to form a pancake.
  • When batter starts to bubble, flip the pancake.  Serve hot.

Notes

Top with pure maple syrup, honey or fruit of your choice.
