Turkey Pot Pie Soup
Now let's talk about turkey soup. Once the holidays are over, use your left-over turkey to prepare this delicious soup to warm you.
- 3 ½ cups bone broth
- 1 cup coconut milk
- 3 Tbsp butter or ghee
- 2 carrots sliced
- 3 celery stalks sliced
- 1 small sweet potato diced
- 1 onion diced
- 2 cups cooked shredded turkey
- 5 sage leaves finely chopped
- 1 tsp thyme
- 1 tsp dried sage
- salt & pepper to taste
In a large pot, melt the butter over medium heat.
Add the onions, carrots, potato and celery. Let cook until onions are soft.
Add the broth and cover allowing to simmer for about 20 minutes or until the carrots and potatoes have softened.
Add the turkey and herbs, allowing them to heat through.
Add the coconut milk. Serve hot. Enjoy!
