Turkey Pot Pie Soup

Now let's talk about turkey soup. Once the holidays are over, use your left-over turkey to prepare this delicious soup to warm you.

Ingredients
  

  • 3 ½ cups bone broth
  • 1 cup coconut milk
  • 3 Tbsp butter or ghee
  • 2 carrots sliced
  • 3 celery stalks sliced
  • 1 small sweet potato diced
  • 1 onion diced
  • 2 cups cooked shredded turkey
  • 5 sage leaves finely chopped
  • 1 tsp thyme
  • 1 tsp dried sage
  • salt & pepper to taste

Instructions
 

  • In a large pot, melt the butter over medium heat.
  • Add the onions, carrots, potato and celery. Let cook until onions are soft.
  • Add the broth and cover allowing to simmer for about 20 minutes or until the carrots and potatoes have softened.
  • Add the turkey and herbs, allowing them to heat through.
  • Add the coconut milk. Serve hot. Enjoy!
