In a large skillet over medium heat, cook 3 chopped bacon until crisp. Remove with a slotted spoon and leave drippings in the pan.
Add radishes and shallots to the pan and cook undisturbed until slightly charred, about 2 – 3 minutes. Stir and cook until browned on all sides, about 8 – 10 additional minutes. Add garlic, thyme, salt and pepper. Remove from heat and add vinegar, butter and bacon, stirring until everything is well combined.
