Basil Stuffed Peppers
This simple anti-inflammatory recipe takes about 10 minutes prep time and 20 minutes cooking time. It's delicious and has many health benefits from bell peppers, onion, cauliflower, garlic and basil!
- 2 bell peppers halved lengthwise and cleaned
- 1 Tbsp olive or coconut oil
- ½ large onion diced
- sea salt and pepper to taste
- 4 garlic cloves minced
- ½ cup diced tomatoes
- 1 lb ground beef, turkey or chicken
- 1 cup cauliflower rice thawed, if frozen
- 6 basil leaves chopped
Preheat oven to 375°F.
Warm the oil in a skillet and saute the onions, salt and pepper until the onions are translucent. Add the tomatoes and garlic to the pan and simmer for 2 minutes.
Add the ground meat and basil. Saute until completely cooked.
Add cauliflower rice to the pan and combine.
Fill each pepper half with the meat mixture and bake for 15-20 minutes.
Serve with a side salad or roasted sweet potatoes.
