Basil Stuffed Peppers

This simple anti-inflammatory recipe takes about 10 minutes prep time and 20 minutes cooking time. It's delicious and has many health benefits from bell peppers, onion, cauliflower, garlic and basil!

Ingredients
  

  • 2 bell peppers halved lengthwise and cleaned
  • 1 Tbsp olive or coconut oil
  • ½ large onion diced
  • sea salt and pepper to taste
  • 4 garlic cloves minced
  • ½ cup diced tomatoes
  • 1 lb ground beef, turkey or chicken
  • 1 cup cauliflower rice thawed, if frozen
  • 6 basil leaves chopped

Instructions
 

  • Preheat oven to 375°F.
  • Warm the oil in a skillet and saute the onions, salt and pepper until the onions are translucent. Add the tomatoes and garlic to the pan and simmer for 2 minutes.
  • Add the ground meat and basil. Saute until completely cooked.
  • Add cauliflower rice to the pan and combine.
  • Fill each pepper half with the meat mixture and bake for 15-20 minutes.
  • Serve with a side salad or roasted sweet potatoes.
