Apple Cinnamon Sausage Stacks 

Combine savory and sweet to kick off your morning! This meal is delicious the first time around but if you're on the run in the morning, make extras. You can freeze this in individual containers and reheat on a morning when you're in a hurry! Bring it to work and heat it when you arrive; your co-workers will wonder who your private chef is! :)

Ingredients
  

  • 12 slices sweet potato about ¼ inch thick
  • 1 lb sausage patties
  • lbs apples or frozen apples
  • 1 tsp apple pie spice
  • 1 tsp honey
  • 1 Tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F.
  • Sprinkle sweet potato slices with salt and pepper, drizzle with olive oil.
  • Oven roast sweet potato slices on a large sheet tray (leaving at least ¼” between slices) for about 20-30 minutes or until they begin to brown & soften.
  • Portion sausage into eight 2 oz patties and bake on parchment lined sheet tray for 10 minutes or until internal temp reaches 155°F.

Apple Compote

  • Peel, core and slice apples, unless using frozen.
  • Toss apples with apple pie spice and honey and cook in large skillet over medium heat until tender.

Notes

TO SERVE:  Place 3 slices sweet potato on plate, top with 2 sausage patties and a 2 oz scoop of apple compote.
