Ingredients

  • 2<\/span> racks<\/span> of lamb (1.5 lbs each)<\/span> trimmed<\/span><\/li>
  • 3<\/span> Tbsp<\/span> Greek seasoning<\/span><\/li>
  • \u00bc<\/span> cup <\/span> balsamic vinegar<\/span><\/li>
  • \u00bc<\/span> cup <\/span> olive oil<\/span><\/li>
  • 2<\/span> Tbsp<\/span> lemon juice<\/span><\/li>
  • 2<\/span> Tbsp<\/span> Braggs Liquid Aminos, coconut aminos or tamari soy sauce<\/span><\/li>
  • 3<\/span> garlic cloves<\/span> minced<\/span><\/li>
  • \u00bd<\/span> cup<\/span> fresh mint leaves<\/span> minced<\/span><\/li>
  • \u00bd<\/span> cup<\/span> jalapeno pepper jelly<\/span> no added sugar<\/span><\/li>
  • 1<\/span> Tbsp<\/span> hot water<\/span><\/li>
  • Chopped fresh oregano or chives<\/span> for garnish, optional<\/span><\/li><\/ul><\/div><\/div>\n

    Instructions
    <\/div> <\/h3>
    • Rub lamb with Greek seasoning and refrigerate, covered for 2 hours.<\/span><\/div><\/li>
    • In a large shallow dish, whisk Greek seasoning, vinegar, olive oil, lemon juice and Braggs. Add lamb and turn to coat. Refrigerate, covered, 4-6 hours or overnight, turning once or twice.<\/span><\/div><\/li>
    • In a small bowl, mix mint, pepper jelly and hot water until combined. Refrigerate, covered, until serving.<\/span><\/div><\/li>
    • Preheat grill to medium-high heat. <\/span><\/div><\/li>
    • Discard the marinade from the lamb dish. Cover rib ends of the lamb with foil. Grill on an oiled rack, covered, for 2 minutes on each side. Turn and move to indirect heat. Coo, covered until meat reaches desired doneness (135\u00b0F for medium-rare to 145\u00b0F for medium-well), about 25-30 minutes. Let stand for 10 minutes.<\/span><\/div><\/li>
    • Serve with Jalapeno-Mint sauce; sprinkle with oregano, chives and additional mint if desired.<\/span><\/div><\/li><\/ul><\/div><\/div>\n\n
